As an fake English speaker, here I come!
I think that many irregular forms exist already by Old English appears, and the latter was quite chaotic. Acutally, you can find some archaic traces on "alike" and "aloud" that may regarded as irregular adjective too. Only those following new words will be regular as soon as the language develops.
Fish is countable when you refer to it as an animal, but uncountable as food. Actually, many foods that can split infinitely often are uncountable, like bread, cake, chocolates, and so on.
